Servings: 6 corncakes
Ingredients:
170 gr cornmeal
230 ml boiling water
40 gr flour
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon oil
1 egg
3 tablespoons milk
1 small green onion, chopped
fresh parsley, chopped
Instructions:
1. In a medium bowl, mix together cornmeal and hot water. Let sit for 3-5 minutes.
2. In a small bowl, mix together flour, sugar, baking powder and salt.
3. Add the flour mixture into the cornmeal mixture. Mix until incorporated.
4. Add the oil and the egg and mix to incorporate.
5. If necessary, add milk to thin the mixture.
6. Add onions and parsley and mix to incorporate.
7. Grease a pan with a little oil or butter.
8. Spoon the mixture into the pan. Cook over medium-low heat.
9. Serve with cream cheese or salsa.
