Ingredients for 15 pancakes
• 250 gr all-purpose flour
• 60 gr sugar
• 2 teaspoons baking powder
• a pinch of salt
• 60 gr melted butter or sunflower oil
• 2 teaspoons vanilla extract
• 2 large eggs
• 220 ml milk
• zest of one lemon
Instructions:
1. In a large mixing bowl, add the flour, sugar, baking powder and salt. Mix.
2. In the same bowl, add your butter, vanilla, eggs and milk and stir to combine.
3. Add fresh lemon zest. The mixture should be nice and thick.
4. Heat a frying pan on a medium-low heat and add a little butter to the pan.
5. Pour as much pancake batter as you want depending on your prefered pancake size. I used an icecream scoup ¾ filled.
6. Cook for 1-2 minutes or until you start to see bubbles forming on top and then flip.
7. Cook for another minute or until golden.
8. Remove from heat and set aside. Repeat with remaining pancake batter.
9. Serve pancakes with whatever dressings you enjoy most!
· I used a peanut butter buttercream.
120 gr butter
150 gr peanut butter
160 gr powdered sugar (add more if necessary)
1 teaspoon vanilla extract
1-2 tablespoons milk
Mix all ingredients until well combined.
