Cocoa biscuit balls with drunken cherries inside

Servings: 26 biscuit balls


Ingredients:

250 gr cocoa biscuits (or you can use normal ones)

50 gr butter, melted

50 gr powdered sugar

100 ml milk

2-3 tablespoons cocoa powder

1 tablespoon rum extract or rum

26 cherries from cherry liquer/brandy

coconut flakes for garnish


Instructions:

1. Crush the biscuits using a rolling pin or a food processor until they are finely crumbed.

2. In a medium ball, add crushed biscuits, cocoa powder and powdered sugar. Mix well to combine.

3. Add the melted butter, milk and rum. Mix well to combine.

4. Using a tablespoon, scoop out mixture. Place one cheery inside and, using your hands, shape into balls.

5. Roll each ball in coconut flakes.

6. Place them on a tray lined with parchment paper and refrigerate for a couple of hours before serving. I recommend over-night.
