Ingredients:
2 cans green lentils (400 gr each)
3 medium carrots
1 small zucchini
1 medium onion
1/2 parsnip
3-4 cloves garlic
3 tablespoon oil
Salt andpepper to taste
1 tablespoon paprika
Bread or croutons for serving
Extra: olive oil, vegetable broth
Instructions:
1. Dice all vegetables in small pieces (carrots, zucchinis, onion, parsnip, plus the garlic).
2. In a large saucepan, combine all the diced vegetables with the spices and oil.
3. Cook until soft, stirring regularly.
4. When vegetables are done cooking let them rest a little to cool down.
5. In a blender or with the help of a mixer, blend everything together: cooked vegetables and the canned lentils (also with the juices from the lentils). If you want your soup thinner just add some vegetable broth. Add more spices to taste.
6. Serve with a drizzle of olive oil and some toasted bread.
