Fried zucchini

Ingredients:

2 medium zucchinis

4 medium eggs

100 gr flour (+/- 10 gr)

Salt & pepper to taste

1 teaspoon paprika

1 tablespoon dried dill

Oil for frying


Instructions:

1. Trim the ends off zucchinis and slice into 1-1,5 cm slices.

2. Add salt over the zucchinis and let them rest for 10 minutes.

3. After 10 minutes, with a clean kitchen towel or some paper towels press down on the zucchini slices to remove any excess water.

4. In a large bowl mix eggs, flour and spices.

5. Pour oil into pan and heat over medium heat.

6. Dip each slice of zucchini into the flour-egg mixture and then place them in the heated oil.

7. Cook about 2 minutes on each side, until golden brown.

8. Drain zucchinis on some paper towels.

9. Season again with extra salt.
