Baked avocado and eggs

Ingredients:

2 large avocados, halved

4 teaspoons olive oil

4 small eggs

4 strips bacon

4 tablespoons grated cheese

1 green onion, chopped

Salt and pepper to taste

Instructions:

1. Preheat the oven at 220 C.

2. Line a baking tray with parchment paper.

3. Place the avocado halves on the prepared baking tray. Drizzle 1 teaspoon olive oil on each half.

4. Add 1 tablespoon grated cheese in each hole of the avocado halves.

5. Place one bacon strip on each avocado half on the flat side.

6. Gently crack one egg on top of each half.

7. Season with salt, pepper and green onion.

8. Bake for about 15 minutes, until the egg white is set.

9. Serve warm.
