Oven baked vegetable rolls

Ingredients:

3 tablespoons oil + a little more for brushing the rolls

2 medium carrots, grated

1 yellow bell pepper, julienne

1 red bell pepper, julienne

2 onions, chopped

400 gr cabbage, grated

Salt and pepper to taste

2-3 tablespoons soy sauce

1 tablespoon lemon juice

400 gr filo pastry

2 tablespoons flour and a little water

Instructions:

1. In a saucepan, add oil, cabbage and carrots. Cook for about 10 minutes stirring constantly, until almost all the liquid it releases has cooked off.

2. Add bell peppers and onions. Cook for 2-3 more minutes.

3. Add soy sauce, lemon juice and spices and mix to combine. Cook for 1 more minute.

4. Let filling cool completely.

5. Mix flour with 150 ml water.

6. Lay out one filo pastry, brush flour slurry around the edges to moisten and add about 2 tablespoons of filling in one corner of the filo pastry.

7. Fold the sides and roll the filo pastry tightly.

8. Repet with all the filo pastry you got.

9. Meanwhile, preheat the oven at 180 C.

10. Line a baking tray with parchment paper.

11. Place the spring rolls onto the tray and brush with a little oil.

12. Bake until golden brown.
