Mediterranean style baked penne

Ingredients:

400 gr penne

350 gr chicken breast, diced in small cubes

2 tablespoons oil + a little more for greasing

2 red bell peppers

2 yellow bell peppers

1 handful olives, pitted and sliced

2-3 tomatoes, chopped

200 ml tomato sauce

1 teaspoon salt

1 tablespoon basil

1/2 teaspoon chilli powder

grated parmesan to taste

Instructions:

1. Boil the pasta.

2. In a pan, over medium heat, add the oil, chicken breast, salt and chilli powder. Cook until done. Remove chicken from the pan.

3. In the same pan, add the peppers and cook until soft.

4. Preheat the oven at 180 C.

5. Grease a baking dish with a little oil.

6. In a large bowl, mix the cooked pasta, chicken, peppers, tomatoes, olives, spices and tomato sauce.

7. Pour the mixture into the prepared dish.

8. Top with grated parmesan.

9. Cook for 30 minutes over medium heat.

10. Serve warm.
