Ingredients:
2 tablespoons oil
2 medium onions
2 garlic cloves, minced
450 gr broccoli, frozen
250 gr hummus
300 gr penne
salt and pepper to taste
1 cup of pasta cooking water
1. While preparing the sauce, boil the pasta and the broccoli following the instructions on the packages.
2. For the sauce: In a large skillet, heat the oil over medium heat. Add the onions and cook for 5-7 minutes until soften.
3. Add the garlic and cook for one minute more.
4. Add the hummus and about 1/2 of pasta cooking water and stir until creamy. Add more pasta water to thin the sauce if desired.
5. Add the cooked pasta and cooked broccoli, salt and pepper and stir everything well.
6. Cook for 1-2 minutes more.
7. Enjoy!
P.S. You can replace the broccoli with zucchini. It's also delicious!
