Serves: 4
Ingredients
• 1 can chickpeas (400 gr)
• 1 tablespoon olive oil
• 1 tablespoon paprika
• 4 small tomato
• 1 medium onion
• 1 green onion
• 1 avocado
• 1/2 lemon juice
• 100 gr yogurt or sourcream
• 3-4 teaspoon piri-piri (or some spicy sauce)
• 4 wraps (corn or flour tortillas)
• salt and pepper to taste
• cheese of your choice (I used a mix of 3 cheeses)
Instructions:
• Preheat the oven to 200°C and line a baking tray with parchment paper.
• Drain the chickpeas and add to a mixing bowl. Add the olive oil and paprika and stir well.
• Put the chickpeas on the baking tray and roast for 15-20 minutes in the oven. Give the chickpeas a quick toss halfway through.
• In the meanwhile, chop the onions finely and dice the tomatoes.
• Scoop the avocado flesh out and put in a serving bowl. Mash with a fork and season with lemon juice, salt and pepper. Then add the chopped onion and tomatos and mix.
• In a separate bowl, mix the yogurt/sourcream with the spicy sauce.
• In another bowl, grate the cheeses of your choice and mix.
• Heat up the tortillas in a pan or microwave for 30-40 seconds.
• Lay everything out (chickpeas, guacamole, cheese, yogurt spicy sauce and tortillas) and create your wraps!
