Ingredients:
5 chicken breasts, skinless
250 ml buttermilk
3 large eggs
600 gr tortilla chips
200 gr flour
2 teaspoons salt
1 teaspoon pepper
2 teaspoon paprika (you can use chilli powder if you want them spicy)
2 teaspoon garlic powder
Instructions:
1. Cut the chicken breasts in smaller desired pieces.
2. In a bowl, add your chicken pieces and buttermilk. Cover with plastic wrap.
3. Refrigerate for 1 hour.
4. Smash your tortilla chips and mix with flour and spices.
5. In another bowl, beat the eggs.
6. Preheat the oven at 200 C.
7. Line a baking tray with parchment paper.
8. Dip your chicken pieces from the buttermilk to the tortilla mixture. Then, dip them into the eggs and back into the tortilla mixture (buttermilk – tortilla – eggs – tortilla). Gently, shake off any excess.
9. Place your chicken pieces onto the prepared baking pan.
10. Bake for 20 minutes.
11. Serve with your favorite sauces.
P.S. You can also fry your chicken. Fry for about 5-6 minutes until golden brown.
