Ingredients:
· 230 gr butter, room temperature
· 100 gr light brown sugar
· 100 gr caster sugar
· 2 large eggs, room temperature
· 360 gr all-purpose flour
· 80 gr instant oats
· 2 tablespoons vanilla extract
· 1 teaspoon baking soda
· 1 teaspoon baking powder
· 1 teaspoon salt
· 150 gr walnuts, chopped
· 150 gr dark chocolate, chopped
Instructions:
1. In a large bowl, cream together butter and sugars until light and fluffy.
2. Add the eggs and vanilla, mixing just until combined. Do not overmix!
3. In a separate bowl, mix together flour, oats, baking powder, baking soda and salt.
4. Gently, add the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix!
5. Fold in the chocolate chunks and chopped walnuts using a wooden spoon.
6. Cover the bowl with plastic wrap and refrigerate for minimum 1 hour.
7. Preheat the oven to 180 C.
8. Line a baking tray with parchment paper.
9. Spoon the mixture onto the baking tray with the help of an icecream scoop.
10.Bake for about 13-15 minutes.
11.Let cookies cool for 10 minutes onto the tray before removing.
