Vanilla and jelly cake

Instructions:

100 ml oil

4 eggs

7 tablespoons caster sugar

10 gr baking powder

16 gr vanilla sugar

10 tablespoons flour

1 tablespoon vanilla extract

1 teaspoon salt

20 gr gelatin

~ 500 gr frozen or fresh berries

~ 400 gr strawberry jam

Instructions:

1. Preheat the oven at 180 C.

2. Line a baking pan with parchment paper and grease it a little with oil.

3. In a bowl, mix together the eggs, sugar and vanilla sugar.

4. Add the oil and vanilla extract and mix again.

5. Add the flour, baking powder and salt. Mix until combined.

6. Pour the mixture into the prepared pan and bake for 30-40 minutes or until a toothpick comes out clean.

7. Let cool completely into the pan.

8. In a small bowl, prepare the gelatin according to instructions on the package.

9. In a separate bowl, mix the jam with the berries and prepared gelatin.

10. Refrigerate for 10 minutes.

11. Mix the jam mixture a little, then pour over the vanilla cake. Smooth out the jam mixture with a spoon.

12. Refrigerate again for a couple of hours.
