Ingredients:
5 eggs
5 tablespoons all-purpose flour
1 tablespoon baking powder
1 tablespoon oil (and a little more for greasing the pan)
Pinch of salt
fruits (as many as you want - I used apples, apricots, peaches and cherries)
optional: cinnamon, vanilla sugar
Instructions:
1. Separate the yolks from the whites. Beat the egg whites with a pinch of salt. I also added 2 tablespoons of vanilla sugar.
2. In a separate bowl, mix the yolks with baking powder and a tablespoon of flour.
3. Add the egg whites and mix lightly with a spatula, then add the rest of the flour.
4. At the end, add the oil.
5. Grease a 20-25 cm pan with oil or butter, then add the mixture.
6. On top add the preferred fruits. I sprinkled another packet of vanilla sugar on top.
7. Place it in the oven over medium heat for at least 20-30 minutes. Baking time varies depending on the chosen fruit: the juicier they are, the longer it needs.
* If you want a bigger cake, increase the quantities as follows: 6 eggs-6 tablespoons flour, 8 eggs-8 tablespoons flour, 9 eggs-9 tablespoons flour, etc.
