Shortbread jam squares

Serves: 9 bigger squares or 16 smaller squares

Ingredients:

• 125 gr butter (+ 1 tablespoon for greasing)

• 50 gr white sugar

• 1 egg

• 2 tablespoons oil

• 2 teaspoons vanilla extract

• 350 gr all-purpose flour

• 2 teaspoons baking powder

• 400 gr jam (you can use blackcurrant, raspberry, blackberry, blueberry, strawberry)

• icing sugar, for dusting

Instructions:

1. Preheat the oven to 180˚C.

2. In a bowl, whisk together the butter and sugar until well combined.

3. Mix in the egg, oil and vanilla extract.

4. Add the baking powder and 250 grams of the flour and mix with a spoon or a spatula until combined.

5. Bring the mixture together using your hands to make a dough.

6. Grease a 22x22 (23x23cm) cm square baking tray with butter. Spread out half of the dough on the tray.

7. Prick the dough with a fork to prevent bubbles from forming while baking.

8. Spread the jam of your choice on top.

9. In the other half of the dough mix the remaining flour. Rub with your fingers to make a crumb like texture.

10. Sprinkle the crumbs on top of the jam.

11. Bake for 20 minutes, until golden brown on top.

12. Leave it to cool in the pan for around 20 minutes.

13. Cut into squares and sprinkle some icing sugar on top if you like.
