Rice pudding

Ingredients:

500 ml water

500 ml milk, room temperature

200 gr rice, washed

100 gr sugar

2 tablespoons butter

1 tablespoon vanilla extract

1/2 tablespoon lemon zest

a pinch of salt


Instructions:

  1. In a medium sauce pan add the water and salt.

  2. When the water is almost boiling add the rice. Cover with a lid and let it simmer at medium heat until the water is all gone.

  3. Add the milk little by little and stir. Let it simmer.

  4. Check if the rice is cooked through from time to time.

  5. When the milk is almost gone add sugar, vanilla, lemon zest and butter. Stir well.

  6. Serve hot or cold with cinnamon or jam.
