Rice flakes cocoa cookies

Serves: 12 cookies

Ingredients:

150 gr rice flakes (you can also use rolled oats)

100 ml milk

2 eggs

1 teaspoon vanilla extract

2 tablespoons cocoa powder

30 gr raisins or cranberries

3 tablespoons honey

Instructions:

1. Add 100 ml milk and vanilla extract to the rice flakes and simmer on a hob for 3-4 minutes, until a little soft. You can add more milk if necessary. If you’re using rolled oats, use them raw.

2. Let cool completely.

3. Preheat the oven to 180 C.

4. Line a baking tray with parchment paper.

5. In a bowl, mix all ingredients until well combined.

6. Spoon the mixture onto the prepared baking dish in a cookie shape. Flatten them a little.

7. Bake for 10-15 minutes.

8. Let cool completely in the pan before removing.
