Pumpkin Cornbread

Serves: 10 slices

Ingredients:

125 gr oat flour

120 gr cornmeal

1/2 teaspoon cinnamon

1/2 teaspoon pumpkin pie spice

1/4 teaspoon nutmeg

1 teaspoon salt

1 tablespoon baking powder

225 gr pumpkin purée

2 eggs

120 ml milk

100 gr cup sugar

1 tablespoon honey or maple syrup

Instructions:

• Preheat oven to 200°C.

• In a mixing bowl combine oat flour, cornmeal, spices, salt and baking powder. Whisk to combine.

• To a separate bowl, add pumpkin puree, eggs, milk, sugar and honey and mix well.

• Add the dry ingredients into the wet and beat well with a hand mixer.

• Grease an 20x10 cm baking dish with butter.

• Pour the batter into dish and bake about 30 minutes or until a toothpick comes out clean.
