Pumpkin & chocolate muffins

Ingredients:

2 eggs

150 gr sugar

125 gr pumpkin, chopped in small cubes

2 teaspoons vanilla extract

125 gr flour

1 ½ teaspoons baking powder

100 gr dark chocolate, chopped (I had a nice dark chocolate with orange flavor)

Instructions:

1. Preheat the oven at 180 C.

2. Line a muffin tray with muffin cases.

3. In a bowl, mix together eggs and sugar for 2 minutes.

4. Add the diced pumpkin and vanilla and mix again.

5. Add the flour and baking powder and mix until incorporated.

6. Mix in the chopped chocolate.

7. Spoon the mixture into the prepared pan. Fill muffin cases three-quarters full.

8. Bake for 25-30 minutes, until a toothpick comes out clean.
