Ingredients:
250 gr flour
1 tablespoon cinnamon
1 1/2 tablespoons cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 egg
150 gr sugar
120 gr butter
130 gr walnuts, chopped
120 gr raisins or cranberries
Instructions:
1. Preheat the oven at 180 C.
2. Line a baking tray with parchment paper.
3. Blend the persimmon until creamy. Add the baking soda and mix.
4. In a separate bowl, mix together flour, cinnamon, cocoa powder and salt.
5. In another bowl, mix sugar and butter until creamy. Add the egg and persimmon pulp and mix to incorporate.
6. Add flour mixture. Mix to combine.
7. Add walnuts and raisins. Gently, fold in with a spatula.
8. Spoon the mixture onto the prepared baking tray.
9. Bake for 14-17 minutes.
10. Let cool in the pan for 10-15 minutes.
