Pear, peach and plum cobbler

Ingredients:

1 kg mixed fruits: pear, peach and plum

2 tablespoons fresh lemon juice

100 grams sugar

A pinch of salt

2 tablespoons cornflour

120 grams plain flour

1 teaspoon baking powder

60 grams unsalted butter, melted

120 ml buttermilk

Instructions:

1. Preheat your oven to 190ºC.

2. Lightly butter a 23x33cm baking dish.

3. Cut the fruits into small chunks and add them into the prepared dish.

4. Drizzle lemon juice all over them.

5. Add 50g sugar, the cornflour and a pinch of salt. Mix all of the ingredients together with a spoon or spatula.

6. In a large bowl, combine the remaining sugar, the flour, baking powder, and 1/2 teaspoon salt. Whisk everything together.

7. Add the melted butter and the buttermilk over the dry ingredients and stir with a wooden spoon or a spatula until a dough forms.

8. Use two tablespoons to dollop the dough evenly over the fruits.

9. Bake the cobbler about 1 hour, until the fruits are bubbling and the topping is golden brown.

10. Let cool at room temperature for about 15-20 minutes before serving.

11. Serve the cobbler warm with vanilla ice cream.
