Ingredients
For the filling:
1 kg peaches, sliced
1/2 kg strawberries, sliced
1 tablespoon brown sugar
20-25 gr vanilla sugar
1/2 tablespoon vanilla extract
1 tablespoon flour
For the sweet dough:
200 gr flour
100 gr sugar
1/2 teaspoon salt
1/2 tablespoon cinnamon
1 tablespoon baking powder
120 gr butter, cold and cut into pieces
1 tablespoon vanilla extract
180 ml buttermilk
Extra: 2 tablespoons brown sugar for topping
Instructions:
1. Preheat the oven to 180 C and grease it with a little butter (I forgot). I used a 25 cm glass dish.
2. In a medium size bowl mix all the filling ingredients together. Once the fruits are evenly coated, set aside.
3. In a larger bowl combine flour, sugar, baking powder, cinnamon and salt. Using your hands incorporate the cold butter into the dry ingredients until the mixture starts to clump up. It’s okay if you still have bigger chunks of butter throughout the dough.
4. Add the buttermilk and vanilla extract and stir everything together. It forms a wet biscuit dough so don’t add any more flour.
5. Use two large spoons or an icecream scoop to drop dough into big clumps over the filling.
6. Sprinkle some brown sugar over the top. This will give your topping a golden crunchy finish.
7. Bake for 40-45 minutes or until the top is golden brown. I lowerd the temperature to 170 C after 25 minutes.
8. Let cool down for 10 minutes before serving. It’s reall tasty with vanilla icecream or a latte.
