Orange marmalade bread

Ingredients:

200 gr all-purpose flour

1 teaspoon baking powder

A pinch of salt

120 ml vegetable oil + a little more for greasing the loaf pan

140 gr caster sugar

2 eggs

190 ml milk

1/2 teaspoon almond extract

1 teaspoon vanilla extract

Optional: 1/2 teaspoon orange extract

170 gr orange marmalade + more for glazing


Instructions:

1. Preheat the oven to 180 C.

2. Grease a 23x13 cm loaf pan with oil.

3. In a bowl, combine flour, salt and baking powder.

4. In another bowl, mix eggs, vegetable oil, sugar, milk and extracts.

5. Pour the wet ingredients over the dry. Mix to incorporate.

6. Stir in the orange marmalade, making sure to incorporate it evenly throughout the batter.

7. Pour the batter into your prepared loaf pan.

8. Bake the orange marmalade bread for 55 to 65 minutes, until a toothpick comes out clean. After 30-35 minutes cover with tin foil, if necessary, to prevent excess browning.

9. Brush the loaf with some more marmalade while it’s still hot.

10. Let the orange marmalade bread cool in the pan for 15 minutes until removing.
