Ingredients:
· 400 gr all-purpose flour
· 1 tablespoon baking powder
· 1 teaspoon salt
· 350 gr caster sugar
· 240 gr butter + more for greasing
· 6 tablespoons orange juice
· 4 tablespoons orange zest
· 100 gr candied orange peel
· 4 eggs
· 80 ml buttermilk
· 100 gr semi-dark chocolate
· 50 ml heavy whipping cream
Instructions:
1. Preheat the oven at 180 C.
2. Generously, grease a bundt tin with butter.
3. In a bowl, mix flour, baking powder and salt.
4. In a separate bowl, cream together butter and sugar for a couple of minutes, until lightened in color.
5. Add 4 tablespoons of orange juice and zest and continue creaming for another 2 minutes.
6. Add one egg at a time, mixing between each addition.
7. Add flour mixture in three additions, alternating with the buttermilk.
8. Finally, add 80 gr of candied orange and fold to combine.
9. Pour the batter into the prepared bundt tin.
10. Bake for 60-75 minutes, until a toothpick comes out clean.
11. Invert bundt cake onto a wire rack and let cool for 20 minutes, before removing the mold.
12. Meanwhile, prepare the glaze. Melt chocolate into the microwave in 30 seconds blasts. Stir between blasts.
13. Add heavy whipping cream and 2 tablespoon orange juice. Mix to combine.
14. Pour the chocolate glaze over the cooled bundt cake, allowing it to drip over the sides.
15. Decorate the bundt cake with remaining candied orange peel.
