Musli and fruit cake

Ingredients:

3 eggs

200 gr sugar

250 gr fruits of your choice (diced in small cubes if necessary - I used strawberries and blackberries)

2 teaspoons vanilla extract

65 gr flour

150 gr muesli

2 teaspoons baking powder

a pinch of salt

powdered sugar for decoration

Instructions:

1. Preheat the oven at 180 C.

2. Line and grease the baking dish.

3. In a bowl, beat the eggs and the sugar with a mixer for a couple of minutes, until lighter in color.

4. Add the diced fruit, vanilla extract and salt. Stir gently with a spatula.

5. Add the flour, muesli and baking powder and mix gently until well incorporated.

6. Leave the mixture to rest for 10 minutes to soften the muesli.

7. Pour the mixture into the prepared dish and top with more blackberries.

8. Bake over low to medium heat for 45-50 minutes.

9. Let it cool for 20 minutes.
