Jam & apple cookies

Ingredients:

250 gr all-purpose flour

8 gr baking powder

50 gr sugar

200 gr apricot / peach jam

1 tablespoon lemon extract or lemon juice

1 teaspoon vanilla extract

40 ml oil

a pinch of salt

a medium apple, chopped into small cubes

Instructions:

1. Preheat the oven to 180 degrees C.

2. Line or grease a baking pan.

3. In a bowl, mix all the dry ingredients.

4. In a separate bowl, mix all the liquid ingredients and the jam.

5. Pour the liquid into the dry ingredients and mix until well combined.

6. Add the chopped apple and mix well. Depending on the consistency of your jam, you may need to add one more tablespoon of flour or a tablespoon of water / milk.

7. Roll the dough into balls the size of a walnut and place them on the tray. Leave some space between them because they spred a little in the oven. Flatten the cookies with a fork or with your palm.

8. Bake for 10-15 minutes, until slightly golden. They will be still very soft.

9. Leave them to cool in the pan.
