Healthy muffins with apple, carrot and ricotta

Ingredients:

1 egg

250 gr apple sauce

170 gr honey

3 tablespoons melted butter or oil

1 tablespoon vanilla extract

190 gr flour

1 teaspoon baking powder

1 tablespoon cinnamon

A pinch of salt

25 gr grated carrot

50 gr grated apple

110 gr ricotta cheese

65 gr chopped walnuts (or raisins)

Instructions:

1. Preheat the oven to 180 C.

2. Line a muffin tin with muffin cases.

3. In a large bowl, mix the egg, apple sauce, honey, melted butter and vanilla until well incorporated.

4. Add flour, baking powder, cinnamon and salt. Stir until everything is smooth.

5. Add grated apple, grated carrot, ricotta and walnuts/raisins. Fold in gently with a spatula. Do not overmix.

6. Spoon the mixture into the prepared pan.

7. Bake for 20-25 minutes or until a toothpick comes out clean. They don’t rise too much so don’t worry.

8. Let cool in the pan for 10-15 minutes before removing.

9. Keep at room temperature. They last up to 3 days.
