Ginger and plum muffins

Serves: 24 muffins

Ingredients:

300 gr flour

3 teaspoons baking powder

1 teaspoon baking soda

100 gr candied ginger

80 gr coconut flakes

4 eggs

250 gr sugar

120 ml oil

300 gr yogurt

500 gr cream cheese

2 tablespoons lemon juice

12 plums, halved

Optional: whipped cream for serving

Instructions:

1. Preheat the oven at 180 C.

2. Line a muffin tin with muffin cases.

3. In a bowl, mix flour, baking powder, baking soda and coconut flakes.

4. In a separate bowl, cream 2 eggs with 170 gr sugar, oil and yogurt.

5. Add flour mixture and mix until well combined. Leave it aside.

6. In another bowl, mix cream cheese with 2 egg yolks, the rest of the sugar, lemon juice and 70 gr candied ginger.

7. Beat the 2 egg whites until soft peaks. Add into the cream cheese mixture and fold in gently.

8. Spoon the first mixture into the muffin cases. On top, spoon the cream cheese mixture.

9. Top each muffin with half a plum.

10. Bake for 20 minutes.

11. Let cool for 10 minutes into the pan before removing.

12. Serve with whipped cream.
