Ingredients:
180 ml olive oil
180 ml orange juice
3 eggs, medium
200 gr sugar
250 gr flour
110 gr cornmeal
15 gr baking powder
1 teaspoon salt
1 teaspoon orange extract
1 tablespoon lemon zest
20 gr vanilla sugar
100-150 gr orange marmalade/jam
Instructions:
1. Preheat the oven to 170 C.
2. Brush the bottom and sides of a 24 cm round cake pan with oil and line with parchment paper.
3. In a large bowl, mix together the eggs, oil, orange juice and sugar until well incorporated.
4. Add the flour, cornmeal and baking powder. Mix until just combined. Don’t overmix.
5. Add lemon zest, salt and orange extract and slowly incorporate.
6. Pour the batter into the prepared pan.
7. Sprinkle the top with vanilla sugar.
8. Bake about 25-30 minutes until golden or until a toothpick inserted in center comes out clean.
9. Cool the cake in the pan for at least 15 minutes. It’s super moist and fluffy.
10. Top the cake with orange marmalade or jam.
