Ingredients:
200 gr flour
240 gr cornmeal
80 ml butter, melted
100 ml oil
150 gr sugar
3 eggs
350 ml yogurt
2 teaspoons baking powder
1 teaspoon salt
150 gr corn
Instructions:
1. In a large bowl, whisk together melted butter, oil and sugar.
2. Add the eggs and yogurt and stir to combine.
3. In another bowl, combine flour, cornmeal, baking powder and salt.
4. Add the dry ingredients into the wet and mix until well combined.
5. Add the corn and mix to incorporate.
6. Let the batter rest for 10-15 minutes.
7. Meanwhile, preheat the oven at 160 C.
8. Line a baking pan with parchment paper and grease with a little oil.
9. Pour the mixture into the prepared pan.
10. Bake for 40-50 minutes at low-medium heat until a toothpick comes out clean. You can cover the pan with tin foil after 20-30 minutes of baking to prevent excess browning.
11. Let cool for 15-20 minutes before removing from the pan.
12. Serve it with your favorite sweet or savory spreads!
