Coffee cookies with cinnamon sugar

Ingredients:

200 gr sugar

315 gr flour

115 ml oil

35 gr instant coffee

2 tablespoons warm water

2 eggs

1 ½ teaspoons baking powder

¼ teaspoon salt

For the cinnamon sugar:

200 gr sugar

3 tablespoons cinnamon

Instructions:

1. Preheat the oven to 180 C.

2. Line a baking tray with parchment paper.

3. In a bowl, pour the warm water into the instant coffee granules.

4. Add the oil, eggs and sugar (200 gr) into the mixture and stir with a whisk until combined.

5. Add in the flour, salt and baking powder. Mix until combined.

6. In a separate bowl, mix the sugar (200 gr) with cinnamon.

7. Roll the cookies into small balls.

8. Place the cookie balls into the cinnamon sugar bowl and cover them all sides.

9. Place the cookie balls on the baking tray and flatten them a little.

10. Bake in the oven for about 8-10 minutes.
