Cocoa & walnut banana bread

Ingredients:

160 gr flour

50 gr dark cocoa powder

1 teaspoon baking powder

1 teaspoon baking soda

A pinch of salt

3 medium ripe bananas, mashed

2 large eggs

100 gr sugar

100 gr light brown sugar

2 teaspoons vanilla extract

120 gr butter, melted

120 gr walnuts, chopped


Instructions:

1. Preheat oven to 180 C.

2. Line a 22x15 loaf pan with parchment paper. Grease it with a little butter too.

3. In a large bowl, mix together flour, cocoa powder, baking powder, baking soda and salt. Set it aside.

4. In another bowl, mix together mashed bananas and eggs.

5. Add both sugars and vanilla and whisk to combine.

6. Finally whisk in butter.

7. Pour the wet ingredients into the dry ingredients and mix until just incorporated.

8. Stir in walnuts.

9. Pour batter into the prepared pan.

10. Bake for 55 to 60 minutes or until a toothpick comes out clean. Cover with tin foil if necessary for the last 20 minutes.

11. Leave it to cool in the pan for 15-20 minutes until removing.

12. Store in an airtight container or under a soft kitchen towel at room temperature for up to 3-4 days.
