Ingredients:
150 ml oil
150 gr sugar
1 teaspoon baking powder
1 egg
25 ml rum or rum extract
250 gr flour
2 tablespoons cocoa powder
Instructions:
1. In a medium bowl, mix the sugar with oil until well incorporated.
2. Add the baking powder, egg and rum extract. Mix again until well combined.
3. Add half the amount of flour and the cocoa powder and mix.
4. Add the other half of flour and mix with a wooden spoon.
5. Knead the dough for a minute until everything is well incorporated.
6. Divide the dough in half and cover each half into plastic wrap.
7. Refrigerate for minimum one hour.
8. Preheat the oven at 180 C.
9. Line a baking tray with parchment paper.
10. Spread the dough on a surface sprinkled with a little flour.
11. Cut into desired shapes and place the cookies onto the tray.
12. Bake for maximum 10-15 minutes (depending on the size). They will still be very soft when you take them out of the oven, but they’ll harden when they cool.
13. Store the cookies in an airtight container at room temperature.
