Ingredients:
250 gr butter
500 gr flour
2 eggs
150 gr sugar
10 gr baking powder
200-250 gr coconut flakes
2 tablespoons cocoa powder
2 teaspoons vanilla extract
Sprinkles
Instructions:
1. Preheat the oven at 180 C.
2. Line a baking tray with parchment paper.
3. In a bowl, mix together sugar and butter until creamy and lighter in color.
4. Add the eggs, one at a time, and mix to incorporate.
5. Add flour and baking powder. Mix just until combined.
6. Take half of the batter and place in another bowl.
7. Add coconut flakes into half of the batter and cocoa powder into the other half. Mix each one to incorporate.
8. Knead both “dough” for a couple of minutes.
9. Roll the coconut dough until 1 cm thick.
10. Cut the dough using your favorite cookie cutters.
11. Repeat steps 9-10 with the cocoa dough.
12. Place cookies onto the prepared baking tray.
13. Decorate with sprinkles.
14. Bake for about 10 minutes until the coconut cookies are golden.
