Ingredients:
2 eggs
150 gr sugar
200 ml oil
350 ml yogurt
1/2 teaspoon salt
400 gr flour
15 gr baking powder
300 gr cherry jam (or sour cherry jam)
1 tablespoon vanilla extract
2 tablespoons cocoa
Instructions:
1. Preheat the oven at 180 C.
2. Line a muffin tin with muffin cases.
3. In a bowl, mix together sugar and eggs with a handmixer.
4. Add the oil, a little at a time while continuing mixing.
5. Add salt, vanilla, baking powder and yogurt. Mix until combined.
6. Add cocoa and flour and mix gently just until combined.
7. Add the jam and fold in with a spatula.
8. Spoon the mixture into prepared muffin tin.
9. Bake for 20-30 minutes, until a toothpick comes out clean.
10. Let cool in the pan for 10 minutes before removing.
