Ingredients:
300 gr flour
200 gr sugar
3 eggs
250 ml yogurt or buttermilk
100 ml sunflower oil + a little more for greasing the pan
1 teaspoon baking soda
2 teaspoon baking powder
2 teaspoons lemon juice
2 tablespoon vanilla extract
2 tablespoons cinnamon
1/2 teaspoon salt
10 plums, halved (fresh or frozen)
10-20 gr vanilla sugar
Instructions:
1. Preheat the oven at 180 Celsius.
2. Grease a round baking pan with a little oil.
3. In a bowl, mix together eggs and sugar until light in colour and fluffy.
4. Add the buttermilk and mix to combine.
5. Add vanilla extract, baking soda and lemon juice. Mix just until combined.
6. Add in flour, baking powder, salt and cinnamon. Mix until incorporated.
7. Pour the batter into the prepared pan.
8. On top of the batter add the halved plums. Sprinkle vanilla sugar on top.
9. Bake for 30-40 minutes at medium-low temperature or until set. If you use frozen plums you need to cook it for longer, so keep an eye on it.
10. Let it cool for at least 15 minutes until removing from the pan.
