Chocolate muffins

Ingredients:

· 180 gr yogurt or buttermilk

· 180 ml oil

· 2 eggs

· 1 teaspoon vanilla extract

· 1 teaspoon rom extract

· 250 gr sugar

· 60 ml hot water

· 2 teaspoons instant coffee

· 200 gr all-purpose flour

· 1 tablespoon baking powder

· 70 gr dark cocoa powder

· 1 teaspoon salt

· 150 gr dark chocolate chips


Instructions:

1. Preheat the oven to 180 C.

2. Line a 12-hole muffin pan with paper cases.

3. In a large mixing bowl, stir together buttermilk, oil, eggs, extracts and sugar.

4. Dissolve the coffee granules into the hot water and add to the mixture. Stir until well combined.

5. In another bowl, mix together flour, baking powder, cocoa powder and salt.

6. Add the dry ingredients over the wet and mix until combined.

7. Stir in the chocolate chips.

8. Fill the muffin cases until 3/4 full.

9. Bake for 20-25 minutes or until a toothpick inserted comes out clean.

10. Let cool in the pan for 10 minutes before removing.


P.S. They are amazing! Mine were all eaten in one day.
