Chocolate Coffee Cookies

Serves: 30 small cookies or 15 big ones

Ingredients:

160 gr oat flour

30 gr oats

50 gr cocoa powder

1 teaspoon baking soda

1/4 teaspoon salt

115 gr butter

170 gr honey

2 teaspoons instant coffee

100 gr chocolate chips

Instructions:

1. In a bowl , mix all the dry ingredients (without the instant coffee).

2. In a separate bowl, mix the butter, honey and instant coffee. Don’t over-mix or your cookies will spread too much in the oven.

3. Add the dry ingredients to the mixing bowl. Mix until well combined.

4. Fold in the chocolate chips with a spatula.

5. Refrigerate the mixture for 20 minutes.

6. Preheat the oven to 180 C.

7. Line a baking tray with parchment paper.

8. Roll the mixture into balls and place them onto the baking tray. Flatten each cookie with your palm.

9. Bake for 10-12 minutes.

10.Let cookies completely cool into the baking tray.
