Ingredients:
3 medium ripe bananas
200 gr caster sugar
250 gr flour
A pinch of salt
2-3 tablespoons cocoa powder
10 gr baking powder
2 large eggs
150 ml hot water
120 ml milk
100 ml oil
2 teaspoons vanilla extract
For the glaze:
200 gr dark chocolate
100 gr heavy whipping cream, warm
20 gr butter
Instructions:
1. Preheat the oven at 180 C.
2. Grease a baking pan with a little butter or oil.
3. In a bowl, mix together all the dry ingredients: flour, baking powder, salt, cocoa and sugar.
4. In another bowl, puree the bananas. Add eggs, water, milk, oil and vanilla. Mix to combine.
5. Add dry ingredients into the wet. Mix until well incorporated. Don't worry if the batter seems too liquidy.
6. Pour the batter into the prepared baking pan.
7. Bake for 45-50 minutes until a toothpick comes out clean.
8. Let it cool completely before glazing.
9. Meanwhile, prepare the glaze. Melt the chocolate into the microwave in 30 seconds blasts. Stir between blasts.
10. When the chocolate is completely melted, add the warm heavy whipping cream and the butter. Stir to combine.
11. Let it cool a little at room temperature.
12. Pour the chocolate glaze over the cake and spread it out evenly. You can decorate the cake with sprinkles, chocolate chips, coconut flakes or whatever you enjoy most.
13. Refrigerate for a couple of hours before cutting and serving.
