Ingredients:
260 gr all-purpose flour
60 gr cocoa powder
2 teaspoons baking powder
3/4 teaspoon baking soda
1 teaspoon salt
2 large eggs, at room temperature
250 gr white sugar
115 gr unsalted butter, melted
240 ml buttermilk
2 teaspoons vanilla extract
300 gr shredded apple
Instructions:
1. Preheat your oven to 180 C.
2. Butter or oil a 23 x 33 cm baking pan.
3. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.
4. In another large bowl, whisk the eggs until frothy. Then whisk in the sugar, melted butter, buttermilk and vanilla extract.
5. Add the wet ingredients to the dry and stir until combined.
6. Mix in the shredded apple.
7. Evenly spread the batter into the prepared pan and bake for about 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
8. Remove it from oven and let it cool on a wire rack.
9. The flavor and texture of the cake improves the next day. You won’t even taste the apples.
