Ingredients:
300 gr flour
150 gr butter, room temperature
100 gr sugar
20 gr vanilla sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
10 gr baking powder
200 gr sour cream or greek yogurt
100 ml brandy
200 gr cherries, pitted
Icing sugar for serving
Instructions:
1. In a bowl, add cherries, brandy and vanilla sugar. Gently, mix with a spatula to combine.
2. Cover with plastic wrap and refrigerate for 1-2 hours.
3. Preheat the oven at 180 C.
4. Grease a baking tray with a little butter and line with parchment paper.
5. In a bowl, add sugar and butter. Mix until creamy and lighter in color.
6. Add eggs, one at a time, mixing well between each addition.
7. Add sour cream and vanilla extract. Mix to incorporate.
8. In a separate bowl, mix flour, baking powder and salt.
9. Strain the cherries, saving all the juices released with the brandy.
10. In the egg mixture, add flour mixture and the juices from the cherries, alternating dry-wet-dry-wet-dry. The batter should resemble a smooth dough. You can add a little more flour if necessary.
11. Pour the batter into the prepared baking tray. The batter should be thin, about 2 cm high.
12. Scatter the cherries over the batter.
13. Bake for 20-30 minutes, until a toothpick comes out clean.
14. Let cool (almost) completely before cutting.
15. Dust icing sugar on top and enjoy!
