Serves: 15 cookies
Ingredients:
o 100 gr quick oats
o 90 gr all-purpose flour
o 1 1/2 teaspoon baking powder
o 1 1/2 teaspoon ground cinnamon
o 1/4 teaspoon salt
o 2 tablespoon oil or unsalted butter, melted and cooled slightly
o 1 large egg, room temperature
o 1 teaspoon vanilla extract
o 120 ml honey
o 70 gr grated carrots
o 100 gr chopped walnuts
Instructions:
1. In a medium bowl, mix together the oats, flour, baking powder, cinnamon, and salt.
2. In a separate bowl, whisk together the oil, egg and vanilla. Stir in the honey until incorporated.
3. Add in the flour mixture, mixing just until incorporated.
4. Fold in the carrots and walnuts.
5. Chill the dough for 30-40 minutes, covered with plastic wrap.
6. Preheat the oven to 160 C. Line a baking tray with parchment paper.
7. Drop the cookie dough into 15 rounded scoops on the baking sheet. Flatten slightly using a spatula or your hand. The cookies don't spread very much!
8. Bake 12-15 minutes.
9. Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.
