Ingredients:
10 gr baking powder
200 gr butter + a little more for greasing
150 gr sugar
200 gr flour
2 eggs
2 apples, chopped
1 big carrot, grated
50 ml milk
2 teaspoons vanilla extract
2 teaspoons cinnamon
100 gr chocolate chips
1/2 teaspoon salt
For the chocolate glaze:
150-200 gr chocolate
50 gr butter
3 tablespoon milk or heavy cream
Instructions:
1. Preheat the oven at 180 C.
2. Generously, grease a bundt tin with butter.
3. In a bowl, mix eggs and sugar until light and fluffy.
4. Melt the butter and pour over the egg mixture. Add milk and vanilla extract. Mix until combined.
5. Add flour, baking powder, cinnamon and salt. Mix to incorporate.
6. Finally, add grated carrot, chopped apples and chocolate chips. Fold in with a spatula.
7. Pour mixture into the prepared bundt tin.
8. Cook for 60-70 minutes at medium-low heat, until a toothpick comes out clean. After 30-40 minutes you can cover with tin foil to prevent browning too much.
9. When cooked, invert the pan on a wire rack and let cool for 30 minutes before removing the bundt tin.
10. When the cake is completely cooled, melt the chocolate and the butter into the microwave in 30 seconds blasts. Stir after each 30 seconds.
11. Add in the milk and stir to combine.
12. Let cool for a couple of minutes.
13. Glaze the cake.
