Blueberry lemon muffins

Ingredients:

225 gr honey

juice and zest of a lemon

250 gr flour

2 teaspoons baking powder

1/4 teaspoon salt

185 gr yogurt

2 eggs

1 teaspoon vanilla extract

125 gr blueberries, fresh or frozen

Instructions:

1. Preheat the oven at 180 C.

2. Line a muffin tin with muffin cases or use silicone molds.

3. In a bowl, mix all the dry ingredients: flour, salt, baking powder and lemon zest.

4. In a separate bowl, mix all the wet ingredients: honey, yogurt, vanila, eggs and lemon juice.

5. Gently pour the dry mixture into the wet. Mix with a spatula until well incorporated.

6. Add the blueberries and fold them in gently.

7. Spoon the mixture into the muffin cases until three-quarters full.

8. Bake for 30-35 minutes or until a toothpick comes out clean.
