Ingredients:
450 gr biscuits, chopped
300 gr dark chocolate
300 gr butter
200 ml water, hot
150 gr caster sugar
70 gr cocoa powder (or 50 gr dark cocoa powder)
200 gr dried fruit (I used apricots, peaches, apples, prunes, figs, cranberries, pineapple and raisins)
2 teaspoons vanilla extract
Instructions:
1. Grease a 20 cm removable bottom pan with a little butter.
2. Melt the chocolate and the butter. Mix to combine.
3. Chop the dried fruits in smaller pieces. Place them in a bowl. Add vanilla, mix and leave them aside for a couple of minutes.
4. In a small heat-proof bowl, add the hot water and sugar. Mix until all sugar is dissolved.
5. In a large bowl, mix chopped biscuits and cocoa powder.
6. Add dried fruits and chocolate-butter mixture. Mix to combine.
7. Pour the syrup a little at a time, mixing continuously.
8. Spoon the mixture into the prepared pan and flatten well.
9. Refrigerate for at least 3 hours.
10. Keep it refrigerated.
