Ingredients:
For the cake:
• 4 small eggs
• 50 ml oil
• 5 tablespoons sugar
• 10 gr baking powder
• 8 gr vanilla sugar
• 5 tablespoons flour
• about 50 gr berries
• 2 tablespoons instant coffee
• 2-3 tablespoons chocolate flakes
For fruit jelly:
• 300 gr berries
• 2 tablespoons sugar
• 1 sachet of Dr.Oetker gelatin
• 400-500 gr raspberry jam
Instructions:
1. Preheat the oven at 180 C.
2. Line a baking pan with parchment paper.
3. In a bowl, mix together eggs, sugar and vanilla sugar.
4. Add the oil and incorporate.
5. Add flour, instant coffee and baking powder. Mix until well combined.
6. Pour the mixture into the prepared baking pan.
7. Sprinkle berries and coconut flakes on top of the batter.
8. Bake until the cake passes the toothpick test, about 30 minutes.
9. Let cool completely in the pan. Don’t take out the cake from the pan!
10. Meanwhile, prepare gelatin according to instructions on the package
11. In a bowl, mix jam, sugar and berries.
12. Add the gelatin and mix well.
13. Pour the berry mixture on top of the cake (that is still in the pan).
14. Refrigerate for at least 3 hours.
