Banana oatmeal muffins

Ingredients:

· 200 gr flour

· 100 gr oats

· 100 gr brown sugar

· 2 teaspoons baking powder

· 1/2 teaspoon salt

· 3 tablespoons wheat bran

· 1 teaspoon cinnamon

· 2 large eggs

· 60 ml oil

· 60 ml milk

· 1 tablespoon vanilla extract

· 3 bananas, mashed

· 100 gr walnuts, crushed


Instructions:

1. Preheat the oven to 170 C.

2. Line a muffin tin with muffin paper cups or silicone cups.

3. In a large bowl, combine the flour, oats, baking powder, cinnamon, wheat bran and salt.

4. In another bowl, whisk together the eggs, brown sugar, oil, milk, vanilla and mashed bananas.

5. Pour the wet ingredients into the dry and stir until just combined. Don’t overmix.

6. Fold in crushed walnuts.

7. Divide the batter between the muffin cups, filling them almost to the top.

8. Bake for 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.

9. Let cool down for 10 minutes before removing from the pan.
