Ingredients:
150 gr coconut flakes, unsweetened
250 ml hot water
250 ml milk
3 medium eggs
100 gr light-brown sugar (and 2 more tablespoons to sprinkle on top)
60 gr butter, melted
2 teaspoons baking powder
2 teaspoons vanilla extract
1/4 teaspoon salt
470 gr oats (I used quick oats)
80 gr chocolate chips (keep some to sprinkle on top)
Instructions:
1. Preheat the oven at 180 C.
2. Grease your baking dish with a little butter.
3. In a small bowl, add coconut flakes and hot water. Let hydrate for at least 30 minutes. (You can prepare the coconut flakes one day before.)
4. In a large mixing bowl, whisk together milk, eggs, brown sugar, vanilla, butter, baking powder and salt.
5. Add the oats and chocolate chips and fold in to incorporate.
6. Pour the mixture into the prepared baking dish. Spread evenly.
7. Sprinkle on top some chocolate chips and some brown sugar.
8. Bake for 25-35 minutes or until set and golden brown.
9. Serve warm or cold with some milk or fresh fruits.
