Apple meringue tart

Ingredients:

Dough:

3 egg yolks

1 tablespoon sugar

125 gr butter, room temperature

1 teaspoon lemon juice

2 teaspoons lemon zest

A pinch of salt

1 teaspoon baking soda

Filling:

500 gr apples, peeled and sliced

1-2 tablespoons sugar

1 teaspoon cinnamon

2 tablespoons breadcrumbs

Meringue:

3 egg whites

3 tablespoons sugar

Juice from half a lemon

A pinch of salt

Instructions:

1. Preheat the oven at 180 C.

2. Grease a 26 cm tart pan with a little butter.

3. In a bowl, mix sugar and butter until combined.

4. Add egg yolks, salt, baking soda, lemon juice and zest and mix to incorporate.

5. Gradually, add the flour. Continue mixing until all the flour is incorporated and a dough forms.

6. Knead the dough for a couple of minutes on a floured surface.

7. Refrigerate for 35-45 minutes.

8. Meanwhile, add sugar over the sliced apples. Refrigerate until your dough is ready.

9. Place the dough in the prepared tart pan, making sure all the sides are covered well.

10. Sprinkle the bread crumbs on top of the dough.

11. Place the apple slices on top of the bread crumbs.

12. Sprinkle cinnamon on top of the apples.

13. Bake for 20-25 minutes.

14. Meanwhile, prepare the meringue. Beat the egg whites with a little salt, until soft peaks.

15. Gradually, add the sugar and lemon juice and beat for a couple of minutes more.

16. Spoon the meringue on top of the tart and bake again for 5-7 minutes, until golden.

17. Turn off the heat, but let the tart in the oven for 4-5 minutes more, with the oven door open.

18. Remove from the oven and let cool at room temperature.
