Avocado rice

Ingredients: 225 gr rice, rinsed

2 tablespoons oil 500-700 ml water 1 large avocado, mashed 20 gr cilantro, chopped

1 green onion

60 gr yogurt the juice from half a lemon salt and pepper to taste Instructions:

1. In a saucepan over low heat, add rice and oil. Stir a little.

2. Add 2 cups water. Cover with a lid.

3. Cook for 20-25 minutes, until all the water is absorbed and rice is cooked completely. You can add more water if necessary.

4. Mix avocado, cilantro, green onion, yogurt and lemon juice in a blender or a chopper until smooth.

5. When the rice is cooked, pour the avocado mixture over it and stir until combined.

6. Season with salt and pepper.
